what is rhubarb?
Rhubarb is a vegetable. It is a perennial, which means it comes back year after year. The edible part of the plant is the red / pink stalk. Rhubarb is very tart or sour, this is why it is usually paired with something sweet!
Directions for rhubarb punch
Ingredients
- 8 cups rhubarb washed and diced
- 3 cups granulated sugar
- 8 cups water
- 1/2 cup lemon juice
- 1 3oz pkg strawberry jello
- 1 15 oz frozen strawberries in sugar
Directions
Using a large pot, add the chopped rhubarb, sugar, water and lemon juice. Cook over medium heat, stirring often.
Cook until the rhubarb is soft. Scoop softened rhubarb into a strainer that is over a bowl. Use the back of a large spoon to press out the juice of the rhubarb. Discard the pulp. Add the squeezed juice into the pot with the other ingredients.
Remove the pot from the heat and add the Jello. Mix until the Jello is dissolved. Let cool.
Divide the syrup into 4 quart sized freezer bags. Approx 2 cups per bag. Seal the bags.
Place the bags into a bowl or container and place in the freezer. Freeze overnight.
When ready to use, pull the number of bags you need. I bag per 1 liter of ginger ale. Thaw on the counter for 30 minutes.
Dump the rhubarb concentrate into a bowl. Using a wooden spoon, chop the concentrate until slushy.
Chop the partially thawed rhubarb concentrate until it is slushy. Add this into a 2 qt pitcher and add your ginger ale. Stir. Serve and enjoy.
Strawberry puree
If you are looking for a boost of strawberry flavor…
Thaw the container of strawberries on the counter for 20-30 minutes. Using a blender, blend the berries into a puree. Add the puree to your drink and mix.

- 1 medium sized pot
- 1 spatula
- 1 strainer
- 4 zip quart sized freezer bags
- 1 set of measuring cups
Ingredients
- 8 cups rhubarb cut in small pieces
- 3 cups granulated sugar
- 8 cups water
- 1/2 cup lemon juice
- 1 3 oz package strawberry jello
- 1 2 ltr ginger ale
- 1 15 oz sliced strawberries in sugar optional
Instructions
- Using a large pot, add the chopped rhubarb, sugar, water and lemon juice. Cook over medium heat, stirring often. Cook until the rhubarb is softened. Once the rhubarb is soft, scoop it into a strainer that is over a bowl. Using the back of a large spoon press all the juice out of the rhubarb. Discard the pulp. Add the squeezed juice into the pot with the other ingredients. Stir in the jello, mix well. Let the rhubarb syrup cool.
Storing the syrup
- Divide the syrup up into 4, 1 quart sized bags. Approx 2 cups per bag. Seal the bags. Place the bags in a bowl or plastic container and place in the freezer. Freeze overnight or until firm. Remove the bag from the freezer and let thaw on the counter for 20-30 minutes. Open the bag and put the partially frozen syrup into a pitcher. Mash the syrup with a spoon, add 1 liter of ginger ale to the rhubarb syrup. Mix well and serve.
Adding the strawberries
- Remove the frozen strawberries from the freezer. Let thaw on the counter for approx 30 minutes. Using a blender, puree the strawberries. Add to the rhubarb drink. Mix well.
